La Scottiglia

The Hotel Restaurant "La Scottiglia" in Pescina has a history rich in tradition and culinary passion that dates back to the end of the 19th century. At that time, Pescina was not yet the renowned tourist resort we know today. The area hosted only the old Pescina farm, characterized by the spring that flowed into the current nursery, and an ancient church dating back to the previous century.

The roots of the Hotel Restaurant "La Scottiglia" lie in the two historic local trattorias, managed by brother and sister, known as "Da Momo" and "Da Elena". These places were points of reference for travelers passing through the Orcia Valley towards the Amiata and the surrounding villages, offering them shelter, assistance for their horses and, of course, culinary delights.

Among the typical dishes served in the trattorias were acquacotta and Scottiglia, the latter becoming a popular delicacy thanks to local culinary mastery. In the first decade of the 20th century, Scottiglia underwent a significant transformation thanks to the ingenuity of local restaurateurs, in particular Mrs. Vichi Palmira, known as "Zia Palmira". Thanks to her culinary experience acquired in the service of noble families, Zia Palmira enriched the Scottiglia recipe with different varieties of meat and fine condiments, transforming it from a traditional dish to an authentic delicacy.

Around 1900, Scottiglia was born in its current form, a meat soup on a bed of stale bread, which was immediately successful among the customers of local trattorias.

Over the years, Zia Palmira's gastronomic legacy was handed down from generation to generation, until in 1972, with the handover to the new restaurateur and nephew of Zì Palmira, Magini Delio, the old trattoria "Da Momo" changed name becoming the Hotel Restaurant "La Scottiglia". This change testified to the deep bond that the dish had established with the locality itself, becoming its culinary symbol par excellence.

Since then, the Hotel Restaurant "La Scottiglia" has continued to delight its guests with the culinary tradition handed down over time, keeping the authentic gastronomic experience of Pescina alive.

Over the decades, in addition to the rich culinary tradition, passion and commitment have also been handed down, with generations succeeding one another with dedication. Passing from Chelli Adina to Magini Noemi up to Magini Fabio and Pierangioli Massimo, today the fifth generation of the family, the Hotel Restaurant "La Scottiglia" has continued to prosper while maintaining the culinary legacy and welcoming atmosphere that have made it famous .

Each member of the family has contributed with their own talent and vision, keeping intact the quality and authenticity of the recipes handed down over time. Thanks to this dedication, the Hotel Restaurant "La Scottiglia" has become a point of reference not only for locals, but also for visitors who wish to savor true traditional Tuscan cuisine.
